The Sujihiki knife 23 cm KAI KAMAGATA Tim Mälzer is a long, narrow blade
knife that allows cleaner cuts and helps keep more of the juices—and
thus more of the flavor—trapped in the meat.
The longer blade is suitable for precise slices with a single stroke, while the narrower profile helps the blade glide through the meat with even less friction.
It can be used as well for thinly slicing other ingredients such as cucumbers or smoked salmon. It is the Western-style equivalent of the traditional Yanagi knife.
The Tim Mälzer Kamagata series of kitchen knives makes an impact with its high standard of functionality, robust quality and minimalist aesthetics. At the beginning of the multi-year development process in Japan, Tim Mälzer designed the original blade shape himself.
The stylish curve of the

(Japanese for "sickle-shaped") is derived from this distinctive shape.
The blades are made of stainless steel with a polished finish. In
combination with the black handle, the knives have an efficient, cool
