The KAI Seki Magoroku Composite 16.5 cm Santoku knife is a beautiful, Asian-inspired knife.
It is designed for vegetables, proteins, fruit for slicing, dicing, and chopping, that is to say, it is a multi-purpose knife.The Santoku bōchō (Japanese: 三徳包丁; "three virtues" or "three uses") is shorter, lighter, thinner, and more hardened (to compensate for thinness) than a traditional Western chef's knife.
The three cutting tasks which the knife performs well are: slicing, dicing, and mincing.
The KAI Seki Magoroku Composite blades are the epitome of Japanese elegance. What stands out is the distinctive copper-coloured line on the blade. This indicates the separation of the two steel types being used in these blades.
The beautifully finished blade is made from the combination of two different steels, creating a fascinating contrast between the mirror-polished blade and the satined opposite site.
The mirror-polished core of the blade is made from VG MAX Steel with a hardness of 61±1 HRC and the satined outer material from SUS420J2 steel, a softer alloy which adds flexibility, high corrosion resistance and the long-lasting performance of these blades.
A subtle, middle copper layer adds antibacterial resistance and an extra special touch.
The knife features a light brown pakkawood (wood plastic composite material) symmetrical handle.
The handle shows a composite structure of different kinds of wood, just like the blade. The result is a strong and stabilized handle that, even though it is man-made, looks very natural.
The shape of the handle looks like a kind of fusion between the well-known European forged bolster and the traditional Japanese D-grip.
Made for both left-handed and right-handed users, the handle merges into the bolster seamlessly, creating a light dynamic look.
