The KAI Shoso Seki Magoroku 14.5 cm Santoku knife is a beautiful, Asian-inspired chef's knife.
is designed for vegetables, proteins, fruit for slicing, dicing, and
chopping, that is to say, it is a multi-purpose knife. In size, it's
between the small and full-sized santoku.
This in-between weight and size make it perfect for medium-sized kitchen tasks, from slicing carrots and shallots to mincing herbs to cutting chocolate or butter.
Cooks with smaller hands or those who simply prefer a smaller, lighter knife may find that this smaller santoku becomes a top go-to knife.
The slight belly curve enables the cook to rock the blade slightly and makes this santoku as easy to use as a chef's knife. It is especially well suited to a down-and-forward cutting motion (push cut) and many cooks swear by their santoku for top performance.
The Shoso Seki Magoroku series is the latest addition of KAI brand.
It consists of western type, symmetrical, full stainless steel design knives, with satin finish and non-slip handle for professional use.
The blade is monosteel, with a hardness of 58±1 HRC. It features a Daido 1K6 High Carbon Stainless steel, polished blade and a convex symmetrical ellipsoidal cutting edge of 24° approximately.
The convex, 3 step grinding technology used on the series, reduces the resistance from the cutting edge resulting in a smoother sharpness.
The ergonomic handle is a continuation of the blade, from 18-8 stainless steel material.
The shape of the knives is symmetrical and the knives are functioning in both hands.
