The beautiful KAI Shun Nagare 15 cm Petty knife is in size, between a chef’s knife and a paring knife, making it the perfect size for all those in-between tasks.
For trimming green beans, broccoli, and other jobs where precision is essential, a petty knife is the excellent choice.It is ideal for a multitude of small tasks where
more precise cuts are needed, such as trimming broccoli, green beans, or
other smaller vegetables.
Some cooks like to use it in their hand,
too—almost like a large paring knife. Others like its smaller size as an
alternative to the chef’s knife. Its very slightly curved belly enables
it to do moderate rocking cuts. It’s nimble enough to peel an onion in
hand, then slice it up in short order.
With Shun Nagare, KAI has created another innovative masterpiece of Japanese blacksmithing.
The sophisticated design, the special properties of the materials used and a technically complex production process mean that this series of knives belongs to the absolute luxury class.
The blade on the Kai Shun Nagare knives immediately draws the attention.
On the highly polished blade, an ornately decorated, radial pattern of Damascus layers is visible.
It consists of two different types of steel, flexible VG2 steel and hard VG10-steel, which are bonded to a 72-layered piece of Damascus steel. The complex layering of the two types of steel results in a blade with exceptionally sustainable cutting power.
As such it has become a type of dual core blade with a hardness of 61 HRC.
Innovatively forged and remarkably designed. As if the rays of a rising sun have been captured in the blade. The pattern runs over the entire surface of the blade up to the razor-sharp tip with a subtle micro bevel.
The handle has been ergonomically designed with a slight descending line and a small belly. As a result the blade rests perfectly in your hand when cutting. The handle has been made from black-grey mélange Pakkawood and secured with two rivets.
This effect, combined with the mottled grey-black handle, gives the knife an impressive overall appearance.
The forged full tang in the handle creates a beautiful balance with the blade. All of this seamlessly blends with the image of these remarkable kitchen knives.
