The 16,5 cm Zanmai Ultimate Aranami Nakiri knife is a general-purpose vegetable knife, originated in Japan, with a quite tall blade from the cutting edge to spine and a very flat edge.
This means that the whole blade makes contact against the cutting board with minimal follow through, without cracking the knuckles against the cutting board with each chop.
The nakiri is a double beveled knife - that means it’s ground and sharpened symmetrically, like most knives in North American or European kitchens. This makes them both easier to use and easier to sharpen.
It is used for a variety of cutting cutting tasks such as chopping, slicing, dicing and mincing.
The specific Aranami Nakiri knife is a joy to work with and a beauty to look at.

ULTIMATE ARANAMI series is the pride of MCUSTA ZANMAI.
Damascus blade is composed of 32 layers of VG10 and VG2 steel with no core (individual layers run throughout entire blade all the way to the edge).
The knife retains more stability in the blade, since you do not have
multiple steels with different Rockwell hardness. With the Mcusta Zanmai ULTIMATE ARANAMI knife, you get 4 times
more "super steel" than clad knives.
Steel is hardened to 61±1 HRC. Stunning patterns on the blade represent raging seas, that is where the series got its name ARANAMI (raging sea/waves in Japanese).
Like in every Mcusta Zanmai knife, the edge is finished in Zanmai's perfect Hamaguri V-Cut form, making it incredibly sharp and the ideal structure to cut food effortlessly.
Beautiful octagonal handles are made from laminated red Pakka wood.
Both guard and butt of the handle (Tsuba) are made from Nickel Silver alloy, material renowned for its anticorrosion and antibacterial properties.
Handle is decorated with special mosaic rivet pin on handle and bottom cap otherwise used for musical instruments.
Knives from this series come packed in wooden gift box.
