The Gyuto is a Japanese designed chef’s knife. Gyutos vary widely in design but generally range from 200mm to 270mm in length though smaller and larger examples can be found.
Like the familiar western styled chef’s knife, gyutos are commonly tall at the heel, have a reasonably flat profile toward the heel for chopping, a belly toward the tip of the blade for rock cutting, and a pointed tip for precision work.
For most users a gyuto is practically the only knife needed in the kitchen. While specialized knives may be easier to use in some applications, there are few chores that a gyuto cannot do in a pinch.
The Kasumi VG 10 Pro Gyuto Knife 27 cm is a classic western style, all-purpose gyuto knife which features a curved blade allowing to rock the knife on the cutting board for a more precise cut.

Sumikama, the manufacturer of Kasumi knives, with more than ten years of production of "super steel" knives, has developed the first all VG-10 "super steel" western style knives.
This series of Kasumi knives is referred to as the VG-10 Pro series.
Opposite to the multilayered clad knives with a decorative pattern on the blade, the Pro knives are single ply knives with VG-10 "super steel" blades. A single ply knife offers more stability in the blade, since you do not have multiple steels with different Rockwell hardness as you do with a multilayered knife. With the Kasumi VG-10 Pro knives, you get 4 times more "super steel" than clad knives.
The KASUMI VG10 PRO knives are hand made, availing of the experience of skillful professionals and experts and are produced in the same way with the Japanese traditional swords.
VG-10 STEEL
V-Gold No. 10 is a high carbon stainless steel with cobalt, chromium, manganese, molybdenum and vanadium for added durability and ease of sharpening. V-Gold No. 10 is a high quality steel developed exclusively for knives and scissors. The addition of 1.4% cobalt to this steel requires special tempering in order to maximize the full benefit of this steel and to achieve a Rockwell hardness of 61-62 degrees, with a high content of carbon specially developed for knives. Sumikama as the original producer of VG-10 damascus knives has plenty of experience working with VG-10 steel.
