The KAI Shun Classic 20 cm Guyto hollow ground Knife is a middle length, all-purpose blade, ideal for a wide variety of cutting tasks.
The 20 cm length is perfect for preparing fruits, vegetables, proteins, and other foods, or even filetting meat and poultry.
The wide blade keeps knuckles off the cutting board and is extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently "rocked" through fresh herbs or spices to produce a very fine mince.
The hollow-ground indentations on the blade create air pockets that reduce friction when cutting, making it easier to glide through the cut.
Furthermore, the hollow edge creates pockets of air which prevent extra thin or soft slices from sticking to the blade.
Shun Classic's thinner blades makes it lighter and less tiring to use than comparable European-style Chef's knives.
The KAI Shun Classic line features beautiful Damascus-clad blades and D-shaped ebony PakkaWood handles.
The core layer of the knife is made from V-Gold-MAX-steel. This is an extremely hard (61±1 HRC, 1.0% carbon, 1.5% cobalt) and corrosion-resistant steel that gives the blade a sharpness that is second to none and an incredible edge retention.
The core is clad with Damascus stainless steel with 16 layers in each side (33 total), then ground and bead-blasted, revealing the flowing pattern of the layered steel. The result is a line of knives that are sharp, durable, and corrosion resistant, as well as beautiful to behold.
The convex cut of the blade together with the manual honing of each Shun knife delivers an unrivalled sharpness that allows the knife to cut through even the toughest material.
The edge on a Shun Classic knife is beveled at a 16° angle creating a very sharp edge.
The knife features a pakkawood (wood plastic composite material) handle D-shaped, which looks and feels like wood, but is dishwasher safe. The other unique feature of the handle is the design. The D-shaped handle actually has a ridge at the bottom, increasing control and grip.
