The Sujihiki bōchō (Japanese: 筋引き) is a double-bevel, thin and light Japanese slicing knife intended for cutting raw or cooked protein such as meat or fish, or terrines.
It differs from the traditional yanagi knife whish is the same in shape but single beveled and used mainly for cutting sushi and sashimi.
It is usually long and not flexible.
It is not intended for cutting onto bones and side pressure should not be applied.
The TOG Sujihiki knife is made from a special steel, roll-forged in Seki City, Japan, using 800 year old Samurai Swordmaking techniques.
