The Sujihiki bōchō (Japanese: 筋引き) is a double-bevel, thin and light Japanese slicing knife intended for cutting raw or cooked protein such as meat or fish, or terrines.
It differs from the traditional yanagi knife whish is the same in shape but single beveled and used mainly for cutting sushi and sashimi. 
It is usually long and not flexible.
It is not intended for cutting onto bones and side pressure should not be applied.




The TOG Sujihiki knife is made from a special steel, roll-forged in Seki City, Japan, using 800 year old Samurai Swordmaking techniques.
21 layers of metal are combined to produce the outmost sharp blade and ensure that it stays sharp.
Ten antimicrobial copper alloy layers give TOG blades their unique stripes and make TOG blades the most hygienic on the market. Each copper layer is about half the thickness of a human hair.
Incredible cutting performance from a central layer of high-carbon (1%) steel core.
The core is made from a very high quality Japanese steel called Acuto 440 that is similar to Western ‘440C’.
It is hardened to Rockwell Hardness (HRC) 58-60 which is harder than most knives and typical of knives from Seki.

Blades sharpened to 10° each side giving a balance between extreme sharpness and resistance to damage.

Laser etched graphics will never fade and there is no ink to come off in your food, unlike with other brands.

TOG handles are made from Kebony maple, a Norweigan eco- alternative to tropical hardwood. Kebony is made by treating FSC** softwood with a bio-waste liquid, using heat and pressure and the result is hard, durable and water resistant.
Full tang
(blade running on full length of the knife) and 3 rivets construction give additional strength to the handle.
