The  KAI  Shun Classic 19 cm Santoku knife is an Asian-inspired, astonishingly efficient slicing knife.
Quite
 larger than a standard santoku, the Shun Classic "Sumo"  Santoku's blade is 30% wider and 1 cm. longer than the standard Santoku. This wider blade allows effortless slicing of even thicker foods, such as potatoes or beets. The extra-wide blade also makes it easy to scoop up prepared food for quick transfer to the cooking pot or pan. 
It is designed for vegetables, proteins, fruit for slicing, dicing, and chopping, that is to say, it is a multi-purpose knife. 
The slight belly curve enables the cook to rock the blade slightly and makes this santoku as easy to use as a chef's knife. It is especially well suited to a down-and-forward cutting motion (push cut) and many cooks swear by their santoku for top performance.

Shun Classic's thinner blades makes it lighter and less tiring to use than comparable European-style Chef's knives.



The Shun Classic line features beautiful Damascus-clad blades and D-shaped ebony PakkaWood handles. 

The core layer of the knife is made from V-Gold-MAX-steel. This is an extremely hard (61±1 HRC, 1.0% carbon, 1.5% cobalt) and corrosion-resistant steel that gives the blade a sharpness that is second to none and an incredible edge retention.
The core is clad with Damascus stainless steel with 16 layers in each side (33 total), then ground and bead-blasted, revealing the flowing pattern of the layered steel. The result is a line of knives that are sharp, durable, and corrosion resistant, as well as beautiful to behold.
The convex cut of the blade together with the manual honing of each Shun knife delivers an unrivalled sharpness that allows the knife to cut through even the toughest material.
The edge on a Shun Classic knife is beveled at a 16° angle creating a very sharp edge.


The knife features a pakkawood (wood plastic composite material) handle D-shaped, which looks and feels like wood, but is dishwasher safe. The other unique feature of the handle is the design. The D-shaped handle actually has a ridge at the bottom, increasing control and grip.
