The Sujihiki knife 24 cm Tojiro DP Pro (English translation “flesh slicer”) is designed to make slicing meat as effortless as possible.
The short height and generally thin blade on the Sujihiki are intended for the user to make a slice with one clean motion.
This
kind of clean cut keeps more of the meat juices—and thus more of the
flavor—inside the meat, rather than pooling on the cutting board.

With a VG10 steel cutting core and 420J stainless steel, a stain resistant cobalt alloy steel clad, Tojiro DP Pro knives are super sharp at 60+/-1 HRC Rockwell and hold their edge for a long period of time.
Eco wood treatment is a non toxic wood stain which offers wood a high end aged look. The eco wood (composite wood), western grip handle has been tried and tested and will last for the life of the knife.
Three rivets offer additional security to the knife.
Tojiro DP Pro knives are full tang and have a bolster (Tsuba) which adds extra equivalence and weight.
