The Sujihiki knife 21 cm Tojiro Black Zen (English translation “flesh slicer”) is designed to make slicing meat as effortless as possible.
The short height and generally thin blade on the Sujihiki are intended for the user to make a slice with one clean motion.
This kind of clean cut keeps more of the meat juices—and thus more of the flavor—inside the meat, rather than pooling on the cutting board.
The Tojiro Black Zen collection radiates the Japanese tradition of knife-making.
The stylish, darkened robe coated blade of the knives is comprised of three layers.
The central layer of the blade is made of VG-10 steel, an extremely hard core alloy with the addition of cobalt, hardened to a hardness of 60+/-1 HRC Rockwell, developed by Takefu industries.
The core is clad with a softer, corrosion-resistant 13-chrome steel.
The Zen series consists of traditional Japanese shaped knives. The relatively large traditional D-handle on these knives is made from light-weight chestnut wood with a black PC resin ferrule.
Because they are also protected with transparent varnish, they show high resistance to moisture and discoloration.
The handle is shaped in the traditional Japanese D-shape. Basically this means it is suited for right-handed use, but the asymmetry does not bother for left-handed users.
