Fine grits 1000/6000 combination whetstone.
The KAI Shun Combination Whetstone is a double-sided, Japanese waterstone, ideal for sharpening Japanese knives, Damascus knives or other high hardness knives.
It is equipped with a plastic casing for steady use.
One side offers 1000-grit sharpening that will reproduce a keen edge to the knife.
The other side, at 6000-grit, will smooth and polish the edge of the knife to perfection.
1. Soak the stone in the water for 5 minutes, and then put it on its steady platform. Sharpening the knives with one or two steps is decided by the degree of blunt tool.
Step 1: 1000 medium grit, used to reproduce a keen edge.
Hold the knife at an angle of 10° - 20°, depending on the knife's angle and grind the edge on the surface of the stone back and forth with gentle pressure. Keep sharpening it until the edge is sharp enough.
2: 6000 grit is for the finer grinding, a necessary step to polish the edge.
Use more gentle pressure, repeat step 1, and repair the edge smoothly and keenly. If used right, the edge is brand new and ultra sharp.
3.Wipe it with wet cloth or rinse it with water after sharpening the tool, and then dry it. Clean the stone surface with a soft brush and put it in the air to make it dry.
Generally speaking, use it once a month to keep your blade sharp.
