The 18 cm Zanmai Ultimate Aranami Santoku is a general-purpose knife, originated in Japan and used for a variety of cutting cutting tasks such as chopping, slicing, dicing and mincing. For this reason, it is one of the most commonly-used knives in both professional and home kitchens.
It has a wide sheepsfoot blade with no bolster (a dull back spine that curves down to meet the straight-edged front blade) and in general it has a thinner blade than a Chef’s Knife allowing for more refined slicing.
The specific Aranami Santoku is an ideal solution for superior cutting properties. A joy to work with and a beauty to look at.

ULTIMATE ARANAMI series is the pride of MCUSTA ZANMAI.
Damascus blade is composed of 32 layers of VG10 and VG2 steel with no core (individual layers run throughout entire blade all the way to the edge). The knife retains more stability in the blade, since you do not have
multiple steels with different Rockwell hardness.
With the Mcusta Zanmai ULTIMATE ARANAMI knife, you get 4 times more "super steel" than clad knives.
Steel is hardened to 61±1 HRC. Stunning patterns on the blade represent raging seas, that is where the series got its name ARANAMI (raging sea/waves in Japanese).
Like in every Mcusta Zanmai knife, the edge is finished in Zanmai's perfect Hamaguri V-Cut form, making it incredibly sharp and the ideal structure to cut food effortlessly.
Beautiful octagonal handles are made from laminated red Pakka wood.
Both guard and butt of the handle (Tsuba) are made from Nickel Silver alloy, material renowned for its anticorrosion and antibacterial properties.
Handle is decorated with special mosaic rivet pin on handle and bottom cap otherwise used for musical instruments.
