The Santoku bōchō (Japanese: 三徳包丁; "three virtues" or "three uses") or Bunka bōchō (文化包丁) is a general-purpose kitchen knife originating in Japan.
‘Santoku’ in Japanese means ‘three virtues’, relating to its proficiency with meat, fish and vegetables (or with mincing, slicing and dicing). This multipurpose knife is perhaps the most versatile of all knives.
The Santoku's blade and handle are designed to work in harmony by matching the blade's width/weight to the weight of blade tang and handle, and the original Japanese Santoku is a well-balanced knife.
The Santoku TOG knife is made from a special steel, roll-forged in Seki City, Japan, using 800 year old Samurai Swordmaking techniques.
