The G-1 Gyuto 21cm Global G-serie is a true multipurpose knife. Its shapes makes it a classic gyuto knife, ideal for all kinds of veggie cutting.
Nevertheless, it is also listed as a slicing knife, or slicer knife because of its rounded blunt end.
It is very similar to the G-2 in that sense, but is designed for cutting meat into pieces, the idea behind the blunt end is that the tip does not nick or catch as you are slicing through meat and you can smoothly roll it into the cut. These slicing blades work particular well on meat that is close to the bone, such as chicken or duck.

Global knives have a long-lasting sharp blade made of special blade steel, the Cromova 18 stainless steel.
This is ice hardened to 58 Rockwell. After hardening, the knife blade is given a particularly sharp cut by hand by Japanese masters. The perfect and long-lasting sharpness is only possible by hand grinding.
The global blade steel Cromova 18 is hard, flexible and tough at the same time. The blade is protected from rust and, unlike most knife blades, is insensitive to acids and alkalis.
The Global knives from the G series are very convincing due to their low weight and perfect balance. This makes it comfortable and safe to hold and easy to guide. The seamless processing ensures optimal hygiene.
This knife is sharpened on both sides and is suitable for both right and left-handers.
