The beautiful  KAI  Shun Nagare 20 cm Gyuto Knife is a symmetrical bevel, western type chef’s knife (gyuto knife in the Japanese kitchen culture) and it probably is the most-used knife in the kitchen. 

This breathtaking knife is lightweight, agile, and offers an extremely comfortable grip.
The 20 cm. length and razor-sharp edge are perfect for slicing, dicing, and chopping a full range of fruits, vegetables, and other foods.
The wide blade keeps knuckles off the cutting board and comes in extra handy when transferring cut food from board to pan.
With its curved belly, the Gyuto knife can be gently rocked through fresh herbs or spices to produce a very fine mince.

The gyuto is also used to rock-chop stiffer produce and to make fine cuts at the tip of the knife.
It is also used for many different cuts of meat. For larger cuts it is used to saw back and forth.
On the other hand it is used to pull-cut softer meats, and push-cut more muscular cuts of meat.
There is usually a slope from heel of the knife to the tip, causing the wrist to point down and shoulder to raise up when cutting.

The sophisticated design, the special properties of the materials used and a technically complex production process mean that this series of knives belongs to the absolute luxury class.

The blade on the Kai Shun Nagare knives immediately draws the attention. 
On the highly polished blade, an ornately decorated, radial pattern of Damascus layers is visible.  
It consists of two different types of steel, 
flexible VG2 steel and hard VG10-steel, which are bonded to a 72-layered piece of Damascus steel. The complex layering of the two types of steel results in a blade with exceptionally sustainable cutting power.
As such it has become a type of dual core blade with a hardness of 61±1 HRC.
Innovatively forged and remarkably designed. As if the rays of a rising sun have been captured in the blade. The pattern runs over the entire surface of the blade up to the razor-sharp tip with a subtle micro bevel.



The handle has been ergonomically designed with a slight descending line and a small belly. As a result the blade rests perfectly in your hand when cutting. The handle has been made from black-grey mélange Pakkawood and secured with two rivets. 
This effect, combined with the mottled grey-black handle, gives the knife an impressive overall appearance.

The forged full tang in the handle creates a beautiful balance with the blade. All of this seamlessly blends with the image of these remarkable kitchen knives.
