The KAI Shun Premier 15 cm Gokujo knife is a Japanese origin boning knife.
The narrow, sharp, curved blade gets in close to the bone, making it easy to separate meat from bone. Even fibrous tissue is no match for Shun's extremely sharp edge. It reduces the drag as you cut against the meat, so cutting is fast and easy.
When it comes to filleting fish, the blade's 15 cm length is just right to glide through the body of the fish, quickly removing bones and skin.
Once you've used this Japanese boning knife, you may never go back to a European style again.
The Shun Premier line, calls to mind the hand-forged knives of ancient Japan.
While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry.
Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” (61±1 HRC, 1.0% carbon, 1.5% cobalt) to take and hold a precision edge.
The layered Damascus cladding with 34 micro-layers on each side of SUS410/SUS431 stainless steel, supports the core and provides additional stain resistance.
Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag.
The convex cut of the blade together with the manual
honing of each Shun Premier knife delivers an unrivalled sharpness that allows
the knife to cut through even the toughest material.
The edge on a Shun Premier knife is beveled at a 16° angle creating a very sharp edge.
The handle is made of brown walnut.
This
material gives the knife an attractive rustic look, far from the modern
cutlery tool. Moreover, the handle has a symmetrical design that is
perfectly suitable for both left and right-handed cooks.
A beautiful detail is the logo of Tim Mälzer on the end of the handle, adding balance and beauty.
