The Global Deba knife 18 cm is a Japanese kitchen knife with a pointed blade
used mainly to cut fish and meat. The deba knife is used for ultra-thin
slices that require a delicate touch, primarily for fish, though also
used when cutting meat. Their main purpose is to behead and fillet fish.
Its thickness, and often a more obtuse angle on the back of the heel allow it to cut off the heads of fish without damage. The rest of the blade is then used to ride against the fish bones, separating the fillet.

Global knives have a long-lasting sharp blade made of special blade steel, the Cromova 18 stainless steel.
The alloy is ice hardened to 58 Rockwell. After hardening, the knife blade is given a particularly sharp cut by hand by Japanese masters. The perfect and long-lasting sharpness is only possible by hand grinding.
The global blade steel Cromova 18 is hard, flexible and tough at the same time. The blade is protected from rust and, unlike most knife blades, is insensitive to acids and alkalis.
The Global knives from the G series are very convincing due to their low weight and perfect balance. This makes it comfortable and safe to hold and easy to guide. The seamless processing ensures optimal hygiene.
This knife is sharpened on both sides and is suitable for both right and left-handers.
