The K A I Seki Magoroku Kinju, Deba knife is the Japanese boning knife and is characterized by the strong and heavy blade.
The wide back of the blade and the one-sided grinding of the Deba knife are also typical features. Thanks to its special shape and cut, it can fillet fish optimally without causing the meat to tear. Even bones or smaller bones can be optimally cut with this rather heavy and robust knife.
Deba knives always come in a single bevel.

These Japanese designed knives feature an AUS8 vanadium - molybdenium stainless steel polished blade with a hardness of 58±1 HRC that lend your kitchen the unmistakable Far Eastern flair.
The traditional hexagonal handle is made from black Pakkawood, a robust resin and have a leather-like, non-slip embossing. In addition, they are easy to clean and antibacterial. The polished nylon bracket, heat resistant up to 90℃, adds harmony to the elegant black colour.
Because of the Japanese design, these knives don’t have a bolster so the whole edge can be used and the entire length can be sharpened.
The series features traditional Japanese single-bevel blade shapes, with 7 blades of the Kinju knives which are suitable for right-handers, while the two blades of the Hekiju series which are specially designed for left-handed users.
Single-beveled blades excel when extremely precise cuts are needed—for example, when preparing sushi.
