The Kasumi Tora Deba Knife 16.5 cm is a Japanese style kitchen carver primarily used to cut fish, though also used when cutting meat.  

Deba bōchō (Japanese: 出刃包丁, "pointed carving knife") comes in different sizes, sometimes up to 30 cm (12 inches) in length. It is designed to behead and fillet fish.
Its thickness, and often a more obtuse angle on the back of the heel allow it to cut off the heads of fish without damage. The rest of the blade is then used to ride against the fish bones, separating the fillet. 
Deba knives always come in a single bevel.

The blade of this model is made of stainless steel (AUS8) with a high content of molybdenum and vanadium, so that the knife does not absorb odors and does not transfer tastes from one product to another. 

On the surface of the blade a solid oxide film is formed, which provides additional protection against corrosion.

The knife is equipped with a black cylindrical manoglia wooden handle of Japanese type, equipped with an O-ring for better stabilisation.
