The beautiful KAI Kaji 23 cm Bread knife knife will be one of the most-used knives in your kitchen.
Whether
you love wonderfully crusty or delicately tender bread, the Shun
Premier Bread Knife will be your loaf's new best friend, no matter what
its texture.
The key is Shun’s razor-sharp, wide, “low frequency” wavy serrations.
Unlike a plain-edged knife, the serrations let you gently saw through the bread without crushing and with much less crumbing.
Unlike
sawtooth serrations that are spaced closer together, the Shun Premier
Bread Knife’s wide serrations will gently glide through the bread
without tearing.
This keeps the bread’s texture intact and enhances eating pleasure.
With Shun Nagare, KAI has created another innovative masterpiece of Japanese blacksmithing.
The sophisticated design, the special properties of the materials used and a technically complex production process mean that this series of knives belongs to the absolute luxury class.
The blade on the Kai Shun Nagare knives immediately draws the attention.
On the highly polished blade, an ornately decorated, radial pattern of Damascus layers is visible.
It consists of two different types of steel, flexible VG2 steel and hard VG10-steel, which are bonded to a 72-layered piece of Damascus steel. The complex layering of the two types of steel results in a blade with exceptionally sustainable cutting power.
As such it has become a type of dual core blade with a hardness of 60±1 HRC.
The handle has been ergonomically designed with a slight descending line and a small belly. As a result the blade rests perfectly in your hand when cutting. The handle has been made from black-grey mélange Pakkawood and secured with two rivets.
This effect, combined with the mottled grey-black handle, gives the knife an impressive overall appearance.
The forged full tang in the handle creates a beautiful balance with the blade. All of this seamlessly blends with the image of these remarkable kitchen knives.
As a result, each Kai Shun Nagare knife is a delight to work with!
